Sopas is a Filipino comfort food, perfect for chilly evenings or days when you feel down. It’s a chicken soup with a milky broth, macaroni or similar pasta, veggies, and salty hot dog slices. It’s simple to throw together and satisfying!

On the Ingredients

  • Hot dogs may seem like a quintessentially American food, but they were culturally imported by German immigrants. The modern hot dog can trace its origins to Frankfurter Würstchen, long, thin sausages made of pork encased in sheep intestines and parboiled. They were enjoyed since the 13th century and were given to the people during coronations. A 18th century butcher is credited with bringing them to Vienna and inspiring the Vienna sausage and the name “Wiener.” Serving hot dogs on buns does seem to have been an American invention, but it’s debated who did it first. Today, hot dogs are enjoyed around the word with many cuisines having their own spin on them. Hot dogs can be made with pork, beef, bison, chicken, turkey, mixtures of these meats, or plant-based proteins like tofu. They’re lightly smoked and salted to create the desired flavor.
  • Napa cabbage is a type of Chinese cabbage with an oblong shape and densely packed leaves more delicate than a standard cabbage. Napa cabbage is used heavily in Asian cuisines. (Read more about napa cabbage.)

Ingredients

  • 3 bone-in chicken thighs

  • 6 cups chicken stock

  • 1/2 tsp salt (plus more if needed)

  • 1/2 tsp black pepper

  • 2 bay leaves

  • 2 tbsp butter

  • 1 large onion (chopped)

  • 2 cloves garlic (minced)

  • 1/2 cup water

  • 2 cups uncooked pasta (penne, cavatappi, large macaroni, or similar)

  • 1 bell pepper (chopped)

  • 1 large carrot (chopped)

  • 1 celery stalk (chopped)

  • 3 beef hot dogs (sliced)

  • 1 cup whole milk

  • 2 cups chopped napa cabbage

Directions

  • In a soup pot, combine the chicken, chicken broth, salt, pepper, and bay leaves. Bring to a boil and cook for 20 minutes, until the chicken is tender. Remove from the heat and remove the chicken from the broth.
  • In a clean pot, melt the butter over a medium flame, then add the onions and garlic. Sauté for several minutes until the onions soften. While the onions cook, shred the chicken.
  • Add the chicken, water, and pasta and cook for five minutes, stirring frequently.
  • Add the chicken broth and bring to a boil. Add the pepper, carrots, and celery.
  • Cook until the pasta is al dente. Add the hot dogs and milk, and cook until the pasta is done.
  • Remove the pot from the heat and stir in the cabbage. Let the soup sit for five minutes then serve.
