5 Ingredient Peanut Butter Cookies

Peanut butter cookies are a classic American cookie with hundreds of variations. This recipe only uses five ingredients, none of which are flour or grains. They result in a delicious, slightly crumbly, protein-packed treat. You can also add cocoa powder and/or chocolate chips and if you want pieces of peanuts in the cookies, use chunky peanut butter! This same recipe can be used with almond or other nut butters.

This recipe showcases nut butter. Though these cookies call for peanut butter, you can use any nut butter you prefer, such as almond or cashew. Nut butter is made by grinding nuts into a paste, and the variety of types varies in flavor. Nut butter contains a lot of protein, healthy fats, vitamins and minerals, fiber, and phytochemicals. To make sure that you’re picking the healthiest option, select a nut butter that only contains nuts, no extra salt or sugars (more on the health benefits). If nuts don’t agree with you, you can also use sunflower butter. 

Recipe Notes & Keto Substitutions:

Because of this recipe’s high healthy fat content and lack of grains, it’s perfect for people who eat keto. So long as you substitute the sugar with a keto-friendly sweetener. We love to use monk fruit sweetener because it is naturally derived, has no aftertaste, and doesn’t affect digestion. Generally, when substituting monk fruit, start by adding half the amount as sugar is called for, the taste test, and add more as needed. You can also add chocolate chips for keto if you use Lily’s no-sugar-added baking chips, which are sweetened with stevia. Learn more about keto. If you’d like to make this paleo-friendly recipe, pick a nut butter rather than peanut butter (a legume and therefore not allowed on paleo) and a granulated paleo-friendly sweetener, such as coconut sugar. Ingredients

  • 2 cups natural peanut butter (if you’re using unsalted, add a pinch of salt)

  • 2 eggs

  • 1/3 cup sugar OR monk fruit sweetener (or more depending on taste)

  • 1 tsp vanilla extract

  • 2 tbsp coconut oil (melted)

  • Optional
  • 8 tbsp cocoa powder

  • 1/2 cup chocolate chips

Directions

  • Preheat the oven to 350° F.
  • Mix together peanut butter, eggs, vanilla, and monkfruit. Melt the coconut oil and add to the dough, mixing until fully incorporated.
  • Take a spoon and measure out approximately 1/4 cup of dough. Shape it into a ball with your hands and place on a cookie sheet either greased over covered in parchment paper. Repeat with the rest of the dough. The cookies will not spread, so you can place them relatively close together.
  • Using a fork, smoosh down each cookie using the traditional cross method for peanut butter cookies. Cook for 12-15 minutes until the bottom of the cookie is golden brown. The cookies are delicate when hot, so be careful while transferring them to a cooling rack.
