Peach and Bacon Chutney

This delicious chutney is an excellent accompaniment to a charcuterie or cheese board or served alongside bruschetta. It’s also delicious baked with brie!

On the Ingredients

  • Peaches are a variety of stone fruits. They are high in antioxidants and vitamins. They’re low on the glycemic index and may have some interesting additional health benefits. Due to the fiber content, peaches may help digestion. Peach skin is rich in carotenoids and caffeic acid, which have potential cancer-fighting properties. (Read more about the health benefits.)
  • Bacon is a salt-cured pork product made from pork belly or the fatty meat from the back of the pig. For hundreds of years, bacon was produced at farm and in domestic kitchens, an important way of preserving meat. The first commercial bacon was produced in the 1770s in Wiltshire.

Ingredients

  • 1 lb bacon (sliced into small pieces)

  • 3 peaches (diced)

  • 1 tsp fresh thyme

  • 1 large onion (diced)

  • 1 tbsp balsamic vinegar

  • 1 tbsp apple cider vinegar

  • 1/4 cup brown sugar OR 2 tbsp monkfruit sweetener

  • 1/4 cup water

  • 1/2 tsp sea salt

Directions

  • Heat a large skillet over medium-low heat and add the bacon. Cook, stirring regularly until the bacon is crispy. Drain the fat from the pan and return to the stove.
  • Add the onions and sauté until they’re translucent. Add the peaches, thyme, balsamic and apple cider vinegar, sweetener, water, and salt. Cover the pan and cook on low, stirring periodically, until the peaches have softened and broken down about 30-40 minutes.
  • Transfer to a serving vessel and serve warm! You can make this chutney ahead of time and keep it in the refrigerator. But you should reheat before serving.
