Ingredients

  • Pie Ingredients
  • 1 Simple Pie Dough (gluten-free version)

  • 7 pears (a good baking variety like Red Bartlett)

  • 1/2 cup potato starch

  • 1/4 cup sugar OR monkfruit sweetener

  • 1 tsp vanilla

  • Crumble Top
  • 1 cup gluten rolled oats

  • 1/2 cup GF Flour Mix

  • 1/3 cup monkfruit OR monkfruit sweetener

  • 1/4 cup butter

  • 1/2 tsp salt

Directions

  • Start by making the gluten-free pie shell. Wrap it in plastic or beeswax cloth and put it in the refrigerator for a half hour. In the meantime, peel the pears and slice them.
  • In a mixing bowl, toss the pears with the potato starch, sugar or monkfruit, and vanilla.
  • Preheat the oven to 350° F.
  • On a well floured (using gluten-free flour) surface, roll out the pie dough to about 1/8” thickness. Because it is gluten-free, the pie dough is more crumbly and will be more difficult to transfer to the pie pan. If it tears, simply press it back into place once it’s in the pan.
  • Trim the pie dough about an inch of an overhang. Fold the overhang up to create the pie edge and crimp it using a fork. Fill the pear with the pears.
  • For the crumble top, melt the butter and mix it with the oats, gluten-free flour, sugar or monkfruit, and salt. Distribute the crumble over the top of the pie and use your hands to press it into place.
  • Bake the pie for 45-55 minutes, or until the edges are bubbling and a skewer inserted into the center slides through the pie without resistance.
  • Let the pie cool for at least an hour before serving. It’s delicious on its own, but also serves well with vanilla ice cream.
