The Chinese Omelette itself has a very clean flavor, made with a combination of egg and fresh veggies. To accompany this, the omelette is drizzled with oyster sauce, an Asian sauce made from cooking down oysters. It is commonly used in savory dishes from China and Southeast Asia. If you’re allergic to shellfish or are a vegetarian who doesn’t do fish, you can replace the oyster sauce with a vegetarian teriyaki sauce.
Mung bean sprouts are large, crisp, and very satisfying to balance the sweet sauce and rich egg. You can easily sprout mung beans at home for a regular supply (they’re delicious in many other recipes too. But, if you haven’t sprouted them and they aren’t in stock, you can use sunflower shoots to much the same effect.

Ingredients
6 eggs
3 scallions (chopped into 2 inch pieces)
1/2 a carrot (grated)
1/2 cup mung bean sprouts
salt and white pepper to taste
oyster sauce to serve
1 tbsp veggie oil
Directions
- In a medium bowl, whisk the eggs, scallions, carrots, mung beans, salt, and pepper together.
- Heat a large frying pan, skillet, or wok over a medium flame. Add the veggie oil and swirl the pan to coat evenly. Add the egg mixture and swirl to spread evenly.
- Place a lid on the pan and cook until the top of the omelette is just cooked. Transfer to a plate.
- Water down a few tbsp of oyster sauce so it’s pourable, and drizzle the top of the omelette. Slice the omelette into 8 pieces and serve hot.
