Ingredients
1 tsp whole coriander seeds
1 bay leaf
2 whole cloves
3 peppercorns
2/3 cup white or rice vinegar
2/3 cup water
1/4 cup sugar OR monk fruit sweetener
1/2 tsp salt
1/4 tsp black pepper
1 English cucumber
fresh dill to serve
Directions
- Put the vinegar, water, bay leaf, coriander, cloves, and peppercorns in a small saucepan. Bring to a boil, add the sugar, salt, and pepper, and simmer until the sugar dissolves. Remove from the heat and allow to cool completely.
- Thinly slice the cucumber and place it in a bowl. Strain the vinegar mixture and pour it over the cucumbers. Cover and refrigerate for at least one hour before serving. Pair with fresh dill and enjoy!
