- Blackberries are an edible fruit from a bramble in the same family as roses. They’re closely related to raspberries, though they have a deeper, more tart flavor. Blackberries are a nutrition powerhouse packed with vitamins, minerals, and fiber. One cup of blackberries has 50% of the recommended value of vitamin C and a third of the recommended vitamin K. Manganese, a mineral that helps your body metabolize carbs, amino acids, and cholesterol, is also high in blackberries. They’re also low in calories, high in fiber, and low on the glycemic index. Blackberry Galette

They’re very easy to make and delicious! This blackberry galette is the perfect dessert for summer, served alone or with vanilla ice cream!
Ingredients
2 cups fresh blackberries
1/4 cup potato starch OR cornstarch
1/4 cup sugar OR monkfruit sweetener + some for sprinkling
1/2 tsp salt
1 egg
1 tbsp water
- Optional
powdered sugar for dusting
Directions
- Start by making your pie dough. Over the dough and refrigerate for 30 minutes.
- Preheat the oven to 350° F.
- Rinse the blackberries and put them in a mixing bowl. Toss the berries with potato starch or cornstarch, sweetener, and salt.
- Roll out the pie dough to about 1/16” thickness. Use a knife to cut a circle, bout 18” in diameter. Carefully transfer the pie dough to a cookie sheet (or a large baking pan).
- Pile the blackberries in the center of the pie dough circle, taking up the interior half. Fold the extra dough around the berries one section at a time, creating a folded pattern. Leave a window at the top where the berries are visible.
- Beat the egg and water together, and use a pastry brush to apply the egg wash to the pie dough. Sprinkle with sugar or monkfruit sweetener.
- Bake for 45-55 minutes, until the galette is golden brown and the berries are soft. Let the galette cool for at least 10 minutes before serving. Optionally, dust the galette with powdered sugar.
