Winter Salad with Clementines and Toasted Almonds

Celebrate citrus season with this tasty fresh salad! It features sweet clementines, rich avocado, toasted almonds, red onions, crisp lettuce, and a zip of arugula with a mild but tasty olive oil, clementine, and apple cider vinegar dressing. It is the perfect addition to your winter table.

On the Ingredients

  • Clementines are a hybrid between a willowleaf mandarin orange and a sweet orange. They’re small with deep orange, glossy peels. Clementines are typically easy to peel and sweet, with less acid than oranges. Depending on the variety they may or may not have seeds.   • Almonds are a tree nut originally from Southwest Asia. Today, they cultivated widely and highly popular. They’re high in antioxidants, protein, fiber, vitamin E, manganese, and magnesium. (Read more about almonds).

  • Avocados are a large fruit from an evergreen tree native to the Americas. They were first cultivated in Mesoamerica more than 5,000 years ago. They’re known for their creamy texture and mildly nutty flavor. Avocados are nutrient-dense and a great source of healthy fats. They’re also high in fiber, which makes them great for gut health.   • Arugula, also known as Rocket or eruca, is a leaf vegetable from the family Brassicaceae. It has a fresh, bright flavor and is mildly peppery. It’s a delicious way to bring some depth of flavor to a salad. Arugula is nutrient dense and high in calcium, potassium, folate, vitamin k, vitamin c, and vitamin A.

You can also use any sweet citrus variety for this salad such as mandarin, navel, satsuma, or even pomelo.

Ingredients

  • Salad ingredient
  • 1 head of romaine (chopped)

  • 2 handfuls arugula

  • 1/3 cup slivered almonds

  • 1 ripe avocado (sliced)

  • 1/4 red onion (thinly sliced)

  • 2 clementines (peeled and segmented)

  • Dressing ingredients
  • 1/4 cup olive oil

  • 2 tsp apple cider vinegar

  • zest of 1 clementine

  • juice of 1 clementine

  • 2 tsp toasted sesame seeds

  • pinch of salt

  • 1/4 tsp black pepper

Directions

  • Preheat the oven to 350° F. Spread the slivered almonds on a baking tray and roast for 8-10 minutes, until toasted and golden brown. Remove from the oven and let cool in a bowl.
  • Toss the salad ingredients together.
  • Combine the dressing ingredients and toss the salad so it's evenly coated with the dressing.
  • Serve and enjoy!
