This summery breakfast is beyond easy to make yet will make you feel luxurious! Sweet and creamy ricotta over crisp bread, with fresh nectarine bringing that summer flavor. And it will only take about ten minutes to prepare.

On the Ingredients

  • Nectarines are actually a type of smooth-skinned peach. They’re very similar in flavor to peaches but are a little sweeter. Nectarines are nutritious fruits with lots of fiber, potassium, vitamin B3, vitamin C, and copper and small amounts of vitamin A, lutein, zeaxanthin, manganese, zinc, iron, magnesium, and phosphorous.   • Ricotta is a whey cheese that is extremely easy to make at home. All you need is milk and lemon juice or vinegar. Ricotta is very mild and fresh, with a soft and slightly grainy texture. It’s perfect for pasta dishes like stuffed shells and lasagna but also suites a myriad of other dishes. Ricotta is a good source of protein and calcium. Recipe Notes and Substitutions

You can use a lot of different fruits for this recipe, including strawberries, blueberries, kiwis, thin-sliced cantaloupe, citruses, and more. Mix and match even; it’s all delicious! And you can, of course, use any kind of bread, including gluten-free options.

Ingredients

  • 1 nectarine

  • 1 cup ricotta

  • 1 tbsp sugar OR monk fruit sweetener OR honey

  • 1/4 tsp vanilla extract

  • 2 slices sourdough bread

Directions

  • Cut the nectarine into half-moon slices.
  • Toast the bread so it’s nice and crisp.
  • In a medium bowl, combine the ricotta, sweetener, and vanilla. Use a beater to whip the ricotta until it’s light and creamy.
  • Divide the ricotta between the two slices and spread. Top with the nectarine and enjoy!
