Sweet pears make a delicious crisp! It’s especially good paired with some vegan vanilla ice cream, hot out of the oven.

On the Ingredients

Ingredients

  • 1/2 cup raw squash seeds

  • 1/2 tsp sesame oil

  • 4 ripe pears

  • 1/2 cup brown sugar or monkfruit sweetener

  • 1 tsp vanilla extract

  • 2 tbsp potato starch

  • 1/2 tsp cinnamon

  • 1/4 tsp nutmeg

  • 1/2 cup oat bran

  • 1/4 cup rolled oats

  • 1/4 coconut oil

  • 1/2 tsp salt

  • Coconut Bliss Vanilla Bean Ice Cream (Vegan)

Directions

  • Preheat oven to 350° F.
  • Take your squash seeds and coat them in the sesame oil and a tsp of sugar (or monkfruit). Put them on a baking pan and toast for 10-15 minutes, until they’re golden brown.
  • Remove them from the pan and set them aside. Core the pears and cut them into thin slices. Mix them together with the spices, vanilla, potato starch, and half the sugar (or monkfuit). Put them into an 8x8” round pan.
  • Melt the coconut oil and mix in the oat bran, rolled oats, salt, squash seeds, and remaining sugar. Evenly distribute the crisp topping onto the pears.
  • Bake for 25-35 minutes until the top is golden brown and juice bubbling around the edge. Serve hot, with Coconut Bliss Vanilla Bean Ice Cream.
