- Thai chili sauce is a sweet sauce made from chilis, sugar, garlic, and a few other ingredients depending on the brand. You may recognize it as the red dipping sauce often served with spring rolls.
- Cucumbers are a great vegetable for salads, with their crisp texture, clean flavor, and high water content. They’re low in calories but high in vitamins, minerals, and antioxidants (more on the health benefits). For this recipe, we recommend using English or European cucumbers (the long ones), which are a little crisper than slicing cucumbers.
Recipe Notes and Substitution:
If you are in the group that finds cilantro soapy, leave it out and squeeze some lime over the salad instead. You can replace the rice wine with rice vinegar if you like.

Ingredients
1 lb cucumber
1/2 tsp salt
1/4 cup dry roasted peanuts
1/4 cup chopped cilantro
1/2 a shallot (finely sliced)
4 tbsp Thai chili sauce
1 tbsp rice wine
1 tbsp sugar OR monk fruit sweetener
1 tbsp water
Directions
- Peel the cucumber. Slice the cucumber lengthwise and use a spoon to scrape the seeds out. Cut into 1/4-inch half moons and place in a bowl.
- Sprinkle with the salt and use your hand to mix the cucumber slices evenly. Let it rest for 15 minutes.
- While the cucumber rests, combine the Thai chili sauce, sugar, water, and wine in a saucepan. Cook until the sugar dissolves, then remove from the heat and pour it into a small bowl to cool.
- When the cucumbers are done, pour the extra water from the bottom of their bowl. Add the peanuts, shallot, and cilantro and toss.
- Pour the dressing over the salad and toss. Serve and enjoy!
