- Mochi is a dough made from pounded plain rice. The type of rice used is mochigome, a short-grain japonica glutinous rice. Glutinous here doesn’t mean it has gluten; the term refers to its glue-like qualities. These types of rice are very sticky and a little sweeter than other varieties. When you take mochigome and pound it until it is completely broken down into a paste, you get a very sticky, springy, almost gelatinous dough. That is mochi.

Ingredients
3 blocks of Eden Food Mochi (cut into thirds)
2 scallions (chopped)
1 clove garlic (minced)
1 tbsp sesame oil
2 tbsp of soy sauce
1 tsp oyster sauce
1 tbsp gochujang
1/2 tsp chili powder
1 tbsp water
1 tsp sugar or monk fruit sweetener
1/2 tsp sesame seeds
Directions
- Sauté the scallions and garlic in sesame oil. Add the soy sauce, oyster sauce, gochujang, chili, water, and sugar.
- Throw in the mochi and sauté in the sauce, on low, until the mochi is soft, slightly puffy, and sticky. Remove from heat and garnish with sesame seeds.
