Ingredients
- Fruit Filling Ingredients
2 lbs fresh fruit ( could use peaches, nectarines, blueberries, blackberries, etc.)
Golden monkfruit sweetener (to taste)
1 tbsp cornstarch (double for juicier fruit like blackberries)
1 tsp cinnamon
1/2 tsp nutmeg
1/4 tsp salt
1 tsp vanilla extract
- Cobbler Top Ingredients
2 cups all-purpose flour
1/2 cup golden monkfruit sweetener
2 tbsp baking powder
2 tsp cinnamon
1/2 tsp nutmeg
1 stick butter (chilled)
1/4 cup boiling water
1/2 tsp salt
Directions
- Preheat the oven to 375° and grease a 10x8-inch (or around that) baking pan.
- Wash your chosen fruit and, if needed (larger fruit like peaches), cut it into bite-sized pieces. Add the spices, cornstarch, vanilla, and salt and mix it all together. Use golden monkfruit sweetener to sweeten to taste. The fruit should be enough to sweeten it on its own, but depending on how ripe your fruit is, you might want to enhance it lightly.
- Put the fruit mixture into a baking dish and cover it with tin foil. Bake for 20 minutes.
- Five minutes before your timer goes off, mix the dry ingredients in a medium-sized mixing bowl. Cut the butter into small pieces and work it into the flour with your fingers until it is a coarse meal texture. Add the boiling water and stir the dough until it’s just fully incorporated. The dough should be the same consistency as drop biscuits.
- Plop golfball-sized portions of the dough over the top of the partially baked fruit, evenly spread out.
- Put the dish back in the oven (uncovered) and bake until the top is golden brown and the fruit filling is bubbling on the sides (about 35-45 minutes). Serve hot with vanilla ice cream or whipped cream.
