Spinach and Feta Pie

Look no further than this pie if you’re looking for a quick and easy vegetarian meal with great flavor. Halfway between a spanakopita and a quiche, feta and spinach marry with a delicious salty and fresh green combination.

On the Ingredients

  • Spinach is a green leafy vegetable originating in Persia and now enjoyed worldwide. It has a sweet, mild, earthy flavor that does well in many dishes and preparations. Spinach is high in many vitamins and minerals. It’s a good source of vitamins A, C, K1, and B9, iron, and calcium. (Read more about spinach).
  • Feta is a brined sheep milk cheese from Greece. It has a soft, crumbly texture and salty flavor. Because it is made with sheep milk, feta is very low in lactose, making it a safer choice for people suffering from lactose intolerance. Though feta may also be made with a mixture of sheep and goat milk, it cannot be made with more than 30% goat milk. (Read more about feta).

Ingredients

  • 1 Simple Pie Dough

  • 2 bags of frozen spinach

  • 8oz feta cheese

  • 4oz cream cheese

  • 1/2 cup shredded mozzarella

  • 4 cloves garlic (minced)

  • 1 tbsp fresh dill (chopped)

  • 4 eggs

Directions

  • Start by making the pie dough and rolling it out on a well-floured surface. Carefully transfer the pie dough to your pie dish and trim the edges to have an inch of dough hanging over the edge. Roll the dough up to create an edge and crimp with your fingers.
  • Preheat the oven to 350° F.
  • Mix together the spinach, feta, cream cheese, mozzarella, garlic, and dill in a bowl. Add the eggs and stir to combine thoroughly.
  • Pour the filling into the pie shell and smooth the top.
  • Bake for 30-40 minutes until the center of the pie is set. This pie is excellent either hot or chilled.
