Ingredients
- Beef Ingredients
1/2 lb ground beef
1 tsp sesame oil
1 cup sliced shiitake
1 tbsp minced ginger
1 clove minced garlic
2 tsp soy sauce
2 tsp chili powder
2 tsp sriracha
2 tsp brown sugar or monkfruit sweetener
1 tsp red pepper flakes
salt and pepper to taste
- Nacho Ingredients
5 oz tortilla chips
1 cup shredded Monterey Jack
2 scallions
1/4 cup chopped cilantro
1/2 red bell pepper (chopped)
kimchi (optional)
- Spicy Mayo Ingredients
1/4 cup mayonnaise
1 tbsp sesame oil
1 tsp soy sauce
1-4 tsp sriracha (adjust for spice preference)
Directions
- Preheat the oven to 350° F.
- Heat a skillet over medium heat and add the sesame oil. Sauté the ginger and garlic until it becomes fragrant, then add the shiitake mushrooms. Continue to cook until the mushrooms are tender.
- Add the beef and sauté until the meat begins to brown, breaking it into small pieces. Add the rest of the seasoning and cook until the meat is done.
- Mix together the spicy mayo ingredients and set aside.
- Spread the chips out on a cookie sheet and cover them with shredded cheese. Bake until the cheese melts and transfer the nachos to a platter. Top with the beef, rep peppers, scallions, and cilantro, then drizzle the nachos with the spicy mayo.
- Serve hot and enjoy!
