- Pears are a fruit from a tree in the same family as apples and roses. They come in many varieties with flavors ranging from sweet to tart. - Cambozola, sometimes called “blue brie,” is a hybrid a French soft-ripened triple cream and an Italian Gorgonzola. It originated in Germany. It has a buttery flavor with a mild blue kick. A good cheese for blue novices.
Sautéed Pear Kale Salad with Bacon and Cambozola

Ingredients
2 Bosc pears (cored and sliced into 1/2" wedges)
6 slices bacon (chopped)
salt to taste
1/3 cup chopped roasted walnuts
2 shallots (thinly sliced)
2/3 cup cambozola cheese (cubed)
2 bunches kale
olive oil
Directions
- Heat a skillet over a medium-low flame and add the bacon. Sauté until brown and crispy.
- Remove the cooked bacon from the pan with a slotted spoon and set it in a bowl lined with paper towels to absorb the excess oil.
- Pour off all but around a tbsp of the bacon fat from the pan. Return to the heat and add the pear slices to the pan. Sauté, stirring frequently, until the pears are tender and browned (time will vary depending on how ripe the pears are). Remove from heat and allow to cool.
- Remove the stem from the kale, wash, spin dry, and chop into small pieces. Add the kale to a bowl toss with olive oil and season with salt.
- Top with the shallot, bacon, walnuts, cheese, and sautéed pears. Serve and enjoy.
