On the Ingredients
- Carrots are a type of root vegetable that was cultivated from the wild carrots of Europe and Southwestern Asia. They’re usually bright orange, but heirloom varieties may be red, purple, black, white, or yellow. Carrots are known for being high in beta carotene, which gives them their color and has excellent health benefits. But other pigment compounds are found in carrots like alpha-carotene, lutein (great for eyes), lycopene (antioxidant), polyacetylenes (may have anti-cancer properties), and anthocyanins (antioxidant). On top of that, carrots are a high-water-content vegetable that is low on the glycemic index, low in calories, and high in fiber. (Read more about carrots.)
- Cinnamon is a spice that is made from a tree bark. There are over three hundred species of trees in the Cinnamomum genus, but only a couple are used to cultivate the popular spice. Ceylon cinnamon is often called “true cinnamon,” but the far more common variety is cassia. Both are derived from the inner bark of their perspective trees. In America, cinnamon is used chiefly in sweet foods. Cinnamon and sugar go together on cereal, toast, fruits, and in all kinds of desserts. However, in the world at large, cinnamon is used in various sweet and savory dishes, especially in Indian, Turkish, and Persian cuisines. Cinnamon sticks are made from peeled strips of bark and are usually used for decoration or to flavor hot drinks.
- Goat cheese has a distinct creamy but crumbly texture and tangy flavor. Not only is it delicious, but goat cheese is also rich in nutrients. It also contains less lactose than cow milk cheese, making it more digestible for some who have lactose intolerance. Goat milk also mainly contains A2-type casein rather than A1. A1 can cause bloating and digestive discomfort like lactose does. (Read more about goat milk cheese).
