Plan ahead for Saint Patrick’s Day! We have all the fixings to make a great Irish meal that would make a Seanmháthair proud! Potatoes, carrots, rutabagas, cabbage, bangers, stouts, and more. We have several options for beef briskets (local and from away). Why not corn your own brisket? It’s easy and very satisfying. Here are instructions (plan for five days of brining).

Basic Season’s Shift Fire Cider from Torsten – made for a 2 quart mason jar

1 cup grated horseradish

1 cup grated ginger

1/2 cup grated fresh turmeric (or substitute 1/4 cup dried)

2 onions, chopped

20 cloves garlic, chopped

4 hot peppers of choice, increase if desired

peels of 2-3 organic lemons

large handful of fresh rosemary or 1/4 cup dried

1/4 cup black peppercorns, cracked

2 tbsp cardamom seeds

2 tsp cloves

1 cinnamon stick, broken

apple cider vinegar

Added separately:
1/2 cup raw honey (or more to taste)

Add ingredients to a 2 quart mason jar and cover with apple cider vinegar, leaving a bit of air space for ingredients to be shaken. Cover with unbleached parchment paper before covering with lid, so vinegar and metal do not react with each other.

Shake every day and strain through cheesecloth after 1 month. Add ½ cup honey and taste before adding more if desired.

You can make this recipe your own by adding delicious optional ingredients to further support digestion and respiratory health such as fenugreek, fennel, coriander, cumin, thyme, sage, and more.
