Peach and Jalapeno Salsa

This delightfully fresh and summery salsa is quick to make and goes with a variety of dishes, from simple chips to fajitas to tacos. The sweet fruit pairs perfectly with the spicy jalapeños and zesty lime. You can also use other (spicier) chili peppers. Best enjoyed just after preparation.

On the Ingredients:

  • Peaches are a variety of stone fruits. They are high in antioxidants and vitamins. They’re low on the glycemic index and may have some interesting additional health benefits.   • Jalapeños are chili peppers with heat, 4,000 to 8,500 SHU. They’re usually eaten while still green, though sometimes they’re allowed to ripen to yellow, orange, or red. Jalapeños have a lot of vitamins and minerals as well as capsaicin, the alkaloid that gives chilis their heat. Capsaicin has a lot of interesting possible health benefits, like boosting the metabolism, pain relief, preventing stomach ulcers, and perhaps even fighting cancer.   • Avocados are a large fruit from an evergreen tree native to the Americas. They were first cultivated in Mesoamerica more than 5,000 years ago. They’re known for their creamy texture and mildly nutty flavor. Avocados are nutrient-dense and a great source of healthy fats. They’re also high in fiber, which makes them great for gut health. Recipe Notes and Substitutions:

You could replace the jalapeños with a spicier pepper if you want more heat or with bell peppers if spice isn’t your thing.

Ingredients

  • 3 ripe peaches or nectarines

  • 3-5 jalapeños (adjust for preference)

  • 6 strawberries

  • 1 ripe avocado

  • 1/2 a red onion

  • 1 lime (juice and zest)

  • 1/2 cup chopped cilantro

  • salt to taste

Directions

  • Peel the peaches and dice. Wearing gloves, remove the seeds from the jalapeños and dice.
  • Dice the strawberries, onion, and avocado. Add the lime zest and juice, sprinkle with salt, and toss to combine.
  • Serve with chips or alongside Mexican or Tex-Mex style dishes.
