Nigerian Hibiscus Tea (Zobo)

Zobo is a Nigerian drink made with zobo leaves (a type of hibiscus), pineapple, and ginger. It has a zingy, sour/tart flavor that is highlighted by the sweetness and is deliciously refreshing. The ruby red color is a beautiful bonus! We used dried hibiscus flowers, which can be found in the bulk department.

On the Ingredients:

  • Hibiscus is a type of flowering plant from the mallow family, which has several hundred species that grow in temperate, tropical, and subtropical regions. For making hibiscus tea, the calyces of Hibiscus sabdariffa, a variety from Africa, are dried and steeped in water. This tea is enjoyed all over the world and is known for its unique flavor and tartness. It’s also very high in vitamin C and antioxidants and may benefit liver health. (Read more about hibiscus.)

Ingredients

  • 1 cup dried hibiscus flowers

  • skins of 1 ripe pineapple

  • 1/2 of a ripe pineapple (cut into chunks)

  • 2-inch piece of ginger (chopped)

  • 1 tsp whole cloves

  • 8 cups water

  • 2/3-1 cup sugar or monk fruit sweetener

Directions

  • Combine the hibiscus, pineapple skins, pineapple, ginger, cloves, and water in a sauce pot.
  • Cover, bring to a boil, and lower the heat to a simmer. Simmer for 35 minutes.
  • Strain the tea through a fine sieve. Add the sugar or monk fruit (adjust the amount to taste preference). Let the tea cool to room temperature and serve iced!
