Ingredients
2 tbsp butter
4 shallots (chopped)
1 lb mushrooms (chopped) - we used king trumpet and cremini
salt and pepper to taste
1 clove garlic
1 tsp dried thyme
1/2 cup chicken broth OR veggie stock
1/2 cup half and half
4 oz brie (rind removed and cut into cubes)
Directions
- Melt the butter in a skillet over a medium-low flame. Add the shallots and mushrooms, season with salt, and sauté until the mushrooms release their moisture, stirring frequently. This will take 6-10 minutes.
- Add the garlic and thyme and sauté another minute.
- Deglaze the pan with the chicken broth and then add the half-and-half. Simmer for 2-4 minutes, then add the brie. Let the cheese melt and stir it into the gravy. Remove from heat and serve over mashed potatoes, meat, or veggies.
