Our favorite way to prepare maitake mushrooms (AKA hen of the woods) is to make a pizza with Swiss cheese, caramelized onions, and green peppers. This combination also works well with crimini mushrooms. Pick your favorite pizza crust (we used Cappello’s Almond Flour Crust). The volume of ingredients may vary depending on the size of your chosen crust.
On the Ingredients
- Maitake, or Hen of the Woods, is a type of mushroom enjoyed in Japan and China for centuries. It grows in Asia, Europe, and North America. It’s a mild mushroom with a beautiful flavor. It’s perfect for stews, soups, and hot pots and also great on pizza.
- Swiss cheese is a generic term for a Swiss-type medium-hard cheese similar to Emmental. It originated in Switzerland, but the name does not indicate origin, as it can be made anywhere, unlike Emmental. Swiss cheese is known for its mildly sweet, nutty flavor and distinctive holes.
