Maitake and Swiss Pizza

Our favorite way to prepare maitake mushrooms (AKA hen of the woods) is to make a pizza with Swiss cheese, caramelized onions, and green peppers. This combination also works well with crimini mushrooms. Pick your favorite pizza crust (we used Cappello’s Almond Flour Crust). The volume of ingredients may vary depending on the size of your chosen crust.

On the Ingredients

  • Maitake, or Hen of the Woods, is a type of mushroom enjoyed in Japan and China for centuries. It grows in Asia, Europe, and North America. It’s a mild mushroom with a beautiful flavor. It’s perfect for stews, soups, and hot pots and also great on pizza.
  • Swiss cheese is a generic term for a Swiss-type medium-hard cheese similar to Emmental. It originated in Switzerland, but the name does not indicate origin, as it can be made anywhere, unlike EmmentalSwiss cheese is known for its mildly sweet, nutty flavor and distinctive holes.

Ingredients

  • 1 pizza crust

  • 1/2 cup diced maitake mushrooms

  • 1/2 cup diced yellow onion

  • 1/2 cup diced green pepper

  • 2 tsp dried basil

  • 2 tbsp olive oil

  • Salt and pepper to taste

  • 1/2 cup grated Swiss cheese

  • 1/4 cup grated mozzarella

Directions

  • Preheat oven to 450°.
  • Unwrap your pizza dough and place it on a sheet (if using pizza dough, roll it to desired thickness).
  • Drizzle half the olive oil over the crust and spread it across the surface.
  • Use the rest of the oil to sauté the mushrooms, onions, and pepper. Salt and pepper to taste.
  • Sprinkle the basil over the crust, then spread the mushroom mixture on top.
  • Cover with the cheese and bake your pizza for 13-15 minutes or until your pizza top is browning. Serve hot!
