Ingredients
2 cups heavy cream
3/4 cup sugar OR monk fruit sweetener
2 lemons (zest and juice)
Directions
- Mix the cream, lemon zest, and sweetener in a small saucepan. Bring the mixture to a boil over medium-high heat.
- Stir until the sugar or monkfruit has dissolved, then reduce the heat to medium. While stirring constantly, continue to boil for 3 minutes.
- Remove the cream from the heat and stir in the lemon juice. Let it cool for 10 minutes.
- Strain the mixture through a sieve and divide between 4-6 ramekins (depending on their size).
- Cover and refrigerate overnight. Serve with fresh blueberries.
