If you like green beans for the holidays but don’t want a heavy casserole, look no further than this fresh and bright side dish.
On the Ingredients:
- Green beans are the unripe fruit of the common bean, harvested before the bean seeds have fully matured and the pod has hardened. They have a sweet, grassy flavor that is accentuated when they’re cooked right.

- Pine nuts, also called piñón, are the edible seeds of pine trees (29 species produce them). Despite the common name, pine nuts are not true nuts and therefore can be eaten safely by most people with nut allergies. Lemon Garlic Roasted Green Beans

Ingredients
1 lb green beans (ends trimmed)
1 tbsp olive oil
1/4 tsp salt
1/4 tsp black pepper
6 cloves garlic (mined)
1/2 lemon juiced
1/3 cup pine nuts
freshly grated parmesan or gruyere for garnish
Directions
- Preheat the oven to 350° F. Spread the pine nuts on a dry baking sheet and toast for 4-5 minutes, until golden brown.
- Remove from pan right away and set aside. Increase oven temp to 425°F.
- In a mixing bowl, toss the green beans with the olive oil, salt, pepper, garlic, and lemon juice.
- Lightly grease the baking sheet and spread the greens out on it.
- Roast for 14-16 minutes, undisturbed, until they are crisp-tender.
- Transfer to a serving dish and top with toasted pine nuts and grated parmesan or gruyere cheese. Serve and enjoy!
