Peach cobbler is a soul food staple! These small serving-size cobblers are perfect for a dinner party or brunch. Topped with vanilla ice cream or whipped cream, they’re perfection! You can also easily make this recipe vegan by replacing the butter with Earth Balance and the milk with your favorite plant-based alternative.

  • Peaches are a variety of stone fruits. They are high in antioxidants and vitamins. They’re low on the glycemic index and may have some interesting additional health benefits. Ingredients

  • Peach Filling Ingredients
  • 4 ripe peaches

  • 4 tbsp sugar OR monkfruit sweetener

  • 1/8 tsp nutmeg

  • 1/4 tsp salt

  • Cobbler Top Ingredient
  • 3 tbsp butter

  • 1 cup all-purpose flour

  • 2 tsp baking powder

  • 1/3 cup sugar OR 1/4 cup monkfruit

  • 1/8 tsp nutmeg

  • 1/2 tsp salt

  • 1/2 cup milk

  • 1 tsp vanilla extract

Directions

  • Cut the peaches into thin slices and place them in a bowl. Add the sugar, nutmeg, and salt, mixing to coat the peaches evenly.
  • Preheat the oven to 350° F.
  • Place six ramekins on a baking sheet and put 1/2 tbsp of butter in each one. Put the ramekins in the oven while it preheats.
  • Mix together the dry ingredients for the cobbler top. Make a well at the center and pour in the milk and vanilla extract. Mix the milk in to make a sticky dough.
  • When the butter in the ramekins is melted, remove them from the oven and divide the peaches between each ramekin. Scoop the dough on top of the peaches, dividing it between each ramekin.
  • Bake for 30-35 minutes, until the cobbler top, is golden brown and the peaches are soft. Let the cobbler cool down for at least ten minutes before serving.
  • Top the cobbler with a scoop of vanilla ice cream, and enjoy!
