Trifle is a traditional dessert made with layers of cream, cake, fruit, jelly, and custard. Many combinations of flavors can be employed, making them a creative endeavor while creating a visual piece of art as the layers show through the traditional glass vessel. This recipe simplifies the concept to cinnamon whipped cream, apples, and caramel. It’s quick to make, delicious, and gluten-free/grain-free. We’ve also made it no-sugar, but if you prefer to sweeten it with sugar, replace the monkfruit with brown sugar and use a recipe for a traditional caramel. This recipe makes six single servings assembled in wine glasses.
On the Ingredients
- Apples originally came from Central Asia, but they have been cultivated in Asia and Europe for centuries before being brought to America by European colonists. Apples grown from seeds are very different from their parent trees, so to maintain desirable varieties, apple trees are grafted, meaning each apple tree is a clone of the tree that initially produced that variety of apples. The term “an apple a day keeps the doctor away” may be wishful thinking, but apples are very nutrient-dense, containing vitamins, minerals, and antioxidants. (Read more about apples.)

Ingredients
1 1/2 batches of Keto Caramel
8 Granny Smith apples
1/4 cup butter
1/4 tsp salt
2/3 cup monkfruit sweetener (separated)
3 cups heavy cream
1 tsp vanilla
2 tsp cinnamon
Directions
- First, prepare the caramel using our recipe for Keto Caramel (when instructed to vary the cooking time for desired thickness, use 8 minutes). Set the caramel aside in a container that is easy to pour from.
- Cut the apples into thin slices. Heat a pot large enough to hold the apple slices over a medium-low flame. Melt the butter and add the apples, 1/3 cup sweetener, and salt.
- Cook until the apples are soft (about 20-30 minutes). Remove from the heat and allow it to cool to room temperature.
- In a large mixing bowl, beat the heavy cream until it begins to thicken, and add the remaining sweetener, vanilla, and cinnamon. Continue to beat until you have a thick whipped cream.
- Arrange your six wine glasses and spoon about an inch of the whipped cream into the bottom of each glass. Add a half-inch layer of apples and pour a few tbsp of caramel over them, evenly distributing it to the sides, so it’s visible through the glass. Spoon another layer of whipped cream, then apple and caramel, then top with whipped cream and drizzle caramel on top.
- Keep the trifles refrigerated until ready to serve. Enjoy!
