Goat Cheese Stuffed Dates

This recipe is one of the easiest appetizers you’ll find and also one of the most delicious! It’s easily scaleable, so you can make a lot or a little, depending on your crowd.

On the Ingredients:

  • Chèvre is a soft goat cheese with a distinct creamy but crumbly texture and tangy flavor. Not only is it delicious, but goat cheese is also rich in nutrients. It also contains less lactose than cow milk cheese, making it more digestible for some who have lactose intolerance. Goat milk also mainly contains A2-type casein rather than A1.   • Medjool dates are a larger variety and have more caramel flavor than Deglet. They are a good source of natural sugars but still have a low to medium glycemic load, making them a safer fruit for people with blood sugar control issues when enjoyed in moderation.   • Pecans are a nut produced by a type of hickory tree native to the southern regions of the United States and northern Mexico. They’re delicious, rich, and very nutritious. You can also make this recipe with Deglet Dates, but they are smaller, so slicing and stuffing may prove more challenging.

Ingredients

  • 4 oz plain goat cheese

  • 20 Medjool dates

  • 20 pecans

  • 1 tbsp finely chopped chive

Directions

  • Preheat the oven to 325°F. Spread the pecans out on a baking sheet. Toast for 7-10 minutes until the nuts are browned and fragrant. Remove from the pan and let them cool.
  • Cut a slit lengthwise in the Medjool dates and remove the pits.
  • Mix the goat cheese and chives.
  • Stuff each date with goat cheese and place a pecan on top. Serve and enjoy.
