- Garlic scapes are long, curly, green stalks that grow from garlic bulbs. Often, they have an immature bud on one end, which would have developed into a flower if the scape hadn’t been harvested. In flavor, they are herbaceous, oniony, and lightly spicy when raw, though much more mild than raw garlic. After they’re cooked, they become mildly sweet, similar to roasted garlic, and have a texture similar to asparagus. Garlic scapes are only available during a short season in late spring and early summer.

Ingredients
1 pizza crust
6 slices fresh tomato (we used red and green)
1 cup sliced fresh mozzarella or Miyoko's Vegan Mozz
salt and pepper to taste
1/4 cup Garlic Scape Pesto
Directions
- Preheat oven to 450°.
- Unwrap your pizza dough and place it on a sheet (if using pizza dough, roll it to desired thickness).
- Use about a 1/4 cup of your pesto and spread it across the pizza crust (if needed, add a little olive oil to make it easier to apply). Arrange the tomatoes over the pesto. Spread the fresh mozzarella slices over the tomatoes and salt and pepper the top to taste.
- Bake your pizza for 13-15 minutes or until your pizza top is browning. Serve hot!
