Fluffy Baking Powder Bread

This easy to make, yummy bread is great for toast, sandwiches, french toast, bread pudding, or even grilled cheese! It’s more delicate than yeast bread, but not as dense as soda bread. 

On the Ingredients

  • Baking powder is a leavening agent made with a mixture of carbonate or bicarbonate and a weak acid. Baking powder is used in recipes that do not have an acid component to the other ingredients.

This easy to make, yummy bread is great for toast, sandwiches, french toast, bread pudding, or even grilled cheese! It’s more delicate than yeast bread, but not as dense as soda bread. 

Ingredients

  • 4 cups all-purpose flour

  • 8 tsp baking powder (we like Bob’s Red Mill)

  • 3 tsp sugar or monkfruit sweetener

  • 1 1/2 tsp salt

  • 2 1/4 cups milk

  • 1/4 cup vegetable oil

Directions

  • Preheat oven to 430° F. Grease a loaf pan (9x5-inch) and line with parchment paper, inclucing an over hang of paper, so it’s east to lift out.
  • Combine flour, baking powder, salt, and sweetener in a bowl.
  • Make a well in the center and pour in the milk and oil. Mix the dough until the flour is completely incorporated, creating a sticky, loose dough, more like a batter.
  • Fill the loaf pan with the dough and smooth the top.
  • Bake for 30 minutes, then cover the bread with foil and lower the heat to 390° F and bake another 20 minutes.
  • Let the bread cool for 5 minutes, then use the paper overhang to lift the bread from the pan. Cool completely before slicing. This bread is more delicate than a yeast bread, so be gentle while slicing. For best results, don’t slice the bread until the day after baking.
