- Black pepper is a spice used around the world. It’s unrelated to fruit/vegetable peppers such as bell or chili. Peppercorns are the fruits from a flowering vine native to the Malabar Coast of India. All varieties of pepper come from the same plant. Black pepper is cooked and dried unripe peppercorns, green pepper is the dried unripe fruit, and white pepper is the ripe fruit seeds.

Ingredients
4 boneless skinless chicken thighs cut into bite-sized pieces
2 tbsp neutral oil
2 tbsp rice wine
1 tsp ground ginger
1 yellow bell pepper (chopped into bite-sized pieces)
1 red bell pepper (chopped into bite-sized pieces)
1 large sweet onion (sliced)
4 tbsp tamari
1 tbsp sugar OR monk fruit sweetener
1 1/2 tsp black pepper
1/8 tsp salt
white rice to serve
Directions
- Heat the oil in a large skillet or wok over medium-low heat. Add the chicken and sauté, stirring frequently, until browned.
- Add the ginger and stir to incorporate thoroughly, then add the rice wine and deglaze the pan.
- Add the onions, peppers, tamari, sweetener, black pepper, and salt.
- Continue to sauté, stirring occasionally, until the peppers and onions are tender but not totally soft. Remove from heat and serve with white rice.
