On the Ingredients
- Delicata is a sweet, rich, and moist winter squash, with a flavor similar to a sweet potato. It has a thin, edible skin, making it great for sautéing and roasting in thin slices. Winter squash come in many different varieties, but they all originate in the Americas. They are 90% water but are also nutrient dense and high in fiber. - Ricotta is a whey cheese that is extremely easy to make at home. All you need is milk and lemon juice or vinegar. Ricotta is very mild and fresh, with a soft and slightly grainy texture. It’s perfect for pasta dishes like stuffed shells and lasagna but also suites a myriad of other dishes. Ricotta is a good source of protein and calcium. It’s also high in vitamin A, vitamin B12, potassium, magnesium, and zinc. (More on the health benefits).
Delicata Ricotta Pizza

Ingredients
pizza crust or dough of choice (we used Capello’s Naked Pizza Crust)
1/2 a delicata squash
1 cup ricotta cheese
1/2 cup shredded mozzarella
1 medium yellow onion
3 tbsp olive oil
1 clove garlic
dried basil to taste
dried oregano to taste
dried thyme to taste
Directions
- Preheat oven to 350° F.
- Scoop out the guts and seeds of the delicata and slice it into half-moons, about 1/4 inch thick.
- Lay the slices on a cookie sheet (single layer) and drizzle with olive oil. Salt and pepper. Bake at 350° for 25 minutes.
- Thinly slice the onion and sauté in olive oil until they’re beginning to turn translucent.
- Rub the pizza crust with olive oil and garlic, then sprinkle with dried herbs.
- Layer the delicata, onions, ricotta, and mozzarellas cheese on the crust.
- Bake on a cookie sheet at 350° for 15-25 minutes.
