Danish Barley Porridge – Byggrynsgrøt (Vegan)

Barley porridge is a great way to start the day, being both hardy and delicious. With the selection of toppings, each bite can be a different flavor combination. Please note, barley contains gluten.

On the Ingredients

  • Barley is a cereal grain that’s produced by a type of grass. It’s been cultivated by humans since around 9,000 BCE. It has a chewy texture and slightly nutty flavor. Compared to oatmeal, barley porridge has a more robust texture. Hulled barley, which flakes are made from, is a whole grain, whereas pearled barley has had the bran removed and is, therefore, not a whole grain. Barley is low on the glycemic index, is high in fiber and many other nutrients, and may help Lower cholesterol. It is important to note, though, that barley does contain gluten. Recipe Notes and Substitutions

The toppings can be changed to suit your tastes. Different fruits, nuts, and seeds will give you plenty of variety.

Ingredients

  • 1 1/4 cup plant-based milk (almond or oat work well)

  • 1/2 cup barley flakes

  • 1 tbsp brown sugar OR monk fruit sweetener (plus more if desired)

  • pinch of salt

  • 1/3 cup fresh raspberries

  • 1/2 granny smith apple (cut into matchsticks)

  • 1 tbsp roasted pistachios (chopped)

  • 2 tbsp chia seeds soaked in 1 tbsp water

  • cinnamon

  • extra plant-based milk (optional)

Directions

  • Combine the barley flakes and plant-based milk in a small saucepan over medium heat. Bring to a boil, then reduce to a simmer, cover, and cook for 15 minutes until the barley is very soft and the milk is almost entirely absorbed. Stir in the sugar and salt.
  • Serve the porridge in a bowl with the raspberries, granny smith apples, pistachios, and chia seeds on top, sprinkled with cinnamon. You can also add more sweetener and milk if desired.
