- Mulled Wine Ingredients
1 bottle of vegan red wine
1/4 cup mulling spices
1/2-1 cup brown sugar (to preference)
- Cake Ingredients
1 1/2 cups mulled wine
1 2/3 cup light brown sugar
2/3 cup safflower oil
2 tsp vanilla extract
1/2 tsp apple cider vinegar
2 cups + 2 tbsp all-purpose flour
2/3 cup cocoa powder
1 tsp baking powder
1 tsp baking soda
1/4 tsp salt
Directions
- Combine wine, spices, sugar, and oranges (if using) in a medium saucepan. Heat over a medium-low burner until the wine barely begins to simmer.
- Turn off the heat and let it sit for fifteen minutes. Strain out the spices. Use 1 1/2 cups for the cake. Save the rest to drink warm at leisure.
- Preheat oven to 350° F and thoroughly grease a bundt pan.
- In a large bowl, whisk together the red wine, sugar, oil, vanilla, and vinegar.
- In a separate large bowl, sift together the flour, cocoa powder, baking powder, baking soda, and salt.
- Pour the wet ingredients into the dry and whisk only until there are no lumps.
- Pour the batter into the prepared pan and bake for about 35 minutes until a skewer inserted into the center comes out clean.
- Wait ten minutes before gently removing the cake from the pan.
