Ingredients
2 tsp olive oil
1 yellow onion (sliced)
1/2 a red onion (sliced)
2 cloves garlic (minced)
1 lb fajita strips OR stew beef
1 red bell pepper (sliced)
1/2 an orange bell pepper
1 lime or 3 limequats
1 tsp smoked paprika
1 tsp oregano
1 tsp cumin
1 tsp chili powder
salt and pepper to taste
1 large tomato
2 ripe avocados
1 cup sour cream
2 packages of small corn, flour, or almond tortillas
cheddar cheese (grated)
salsa to serve
Directions
- Heat a cast-iron skillet or frying pan over medium-low heat and add the olive oil, onions, and garlic. Saute for a few minutes, then add the stew beef. Continue to cook until the meat is browned, stirring frequently.
- Add the bell pepper and spices—salt and pepper to taste. Continue to sauté until the meat is cooked through. Remove from the heat.
- Slice the tomato. Mash the avocado with a tbsp of the sour cream (use the remaining sour cream to serve) and season with salt, pepper, a pinch of smoked paprika, and a squeeze of lime.
- Squeeze the rest of the lime over the meat and vegetables. Serve with salsa and tortillas.
