Spicy Peanut Cucumber Salad

This salad combines crisp, refreshing cucumbers with a rich, spicy peanut dressing. It’s the perfect side for a heavy dinner.

On the Ingredients

  • Peanut butter is the most popular nut butter and is beloved around the world. Peanuts, actually a legume, are indigenous to South America, and the earliest records of eating a paste made from ground peanuts come from the Aztecs and Incas. The American agricultural scientist George Washington Carver is often credited with inventing peanut butter, but even though he was very influential in agricultural history, he merely included a recipe for it in his 1916 work “How to Grow the Peanut and 105 Ways of Preparing it For Human Consumption.” There had already been several patents filed for various methods going back as far as the 1880s. Peanut butter is high in protein, healthy fats, and antioxidants. It’s low in carbs and on the glycemic index. A small percentage of the population is allergic to peanuts and should avoid them. 
  • Sichuan Chili Oil from Black Slate is made with Sichuan pepper, star anise, black cardamom, and nine other Chinese spices layered with chili heat. Now, despite its name, the Sichuan pepper is neither related to black pepper nor chilis. It comes from a plant in the same family as citrus and rue, and the flavor is a little reminiscent of citrus with a bit of pine mixed in. Its other primary trait is the tingly, numbing sensation it produces in the mouth.

Ingredients

  • Salad ingredients
  • 1 English cucumber

  • 1/4 cup chopped cilantro

  • Dressing ingredients
  • 2 tbsp crunchy peanut butter

  • 1 pinch salt

  • 1 tsp soy sauce

  • 1 tsp rice vinegar

  • 1 tsp Sichuan chili oil OR red pepper flakes

  • 1 tsp sugar OR monk fruit sweetener

  • 1/2 a lime, juiced

Directions

  • Peel the cucumber and cut it into thin slices.
  • Combine the dressing ingredients and mix until smooth.
  • Add the dressing to the cucumber slices and stir thoroughly so all the slices are coated. Add the cilantro and stir in.
  • Serve and enjoy!
