Fresh Summer Tortellini Salad

This spin on a pasta salad combines delicious cheesy tortellini with summer veggies in a garlic and lemon dressing. It’s a great dish on its own or to serve with grilled meats and veggies. 

On the Ingredients

  • Tortellini is a type of stuffed pasta from the Emilia-Romagna region of Italy. Traditionally, they’re stuffed with meat, Parmigiano-Reggiano, egg, and nutmeg and are served in capon broth. However,  in the US, you can buy tortellini filled with many different variations and serve them in a multitude of ways. They differ from ravioli in shape as they’re folded into a ring.

This spin on a pasta salad combines delicious cheesy tortellini with summer veggies in a garlic and lemon dressing. It's a great dish on its own or to serve with grilled meats and veggies. 

Ingredients

  • Dressing
  • 2 tbsp avocado oil

  • zest of 1 lemon

  • 1/4 tsp salt

  • 1/4 tsp black pepper

  • 1/4 tsp garlic powder

  • 1 clove of garlic (minced)

  • Salad
  • 20 oz four cheese tortellini

  • 1 cup frozen corn (thawed)

  • 1 quart cherry tomatoes (cut in half)

  • 4 oz summer sausage (chopped)

  • 1 cucumber OR 1/2 English cucumber (sliced)

  • 1 cup arugula micro greens OR arugula chopped

Directions

  • Cook the tortellini according to the package instructions. Drain and rinse with cold water to bring them to room temp.
  • Add the salad ingredients to a salad bowl and toss.
  • Combine the dressing ingredients and pour over the salad. Toss to evenly coat.
  • Serve and enjoy!
