- Tortellini is a type of stuffed pasta from the Emilia-Romagna region of Italy. Traditionally, they’re stuffed with meat, Parmigiano-Reggiano, egg, and nutmeg and are served in capon broth. However, in the US, you can buy tortellini filled with many different variations and serve them in a multitude of ways. They differ from ravioli in shape as they’re folded into a ring.

Ingredients
- Dressing
2 tbsp avocado oil
zest of 1 lemon
1/4 tsp salt
1/4 tsp black pepper
1/4 tsp garlic powder
1 clove of garlic (minced)
- Salad
20 oz four cheese tortellini
1 cup frozen corn (thawed)
1 quart cherry tomatoes (cut in half)
4 oz summer sausage (chopped)
1 cucumber OR 1/2 English cucumber (sliced)
1 cup arugula micro greens OR arugula chopped
Directions
- Cook the tortellini according to the package instructions. Drain and rinse with cold water to bring them to room temp.
- Add the salad ingredients to a salad bowl and toss.
- Combine the dressing ingredients and pour over the salad. Toss to evenly coat.
- Serve and enjoy!
