Ingredients
1 1/2 cups of over ripe bananas (about 3 large)
1/2 cup granulated sugar OR monk fruit sweetener
1/4 cup Greek yogurt
1 egg
1/4 cup oil
1 tsp vanilla
1 cup all-purpose flour
1/4 cup cocoa powder
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1/2 cup semi sweet chocolate chips
1/3 cup chopped walnuts
Directions
- Preheat oven to 425° F. Line a muffin pan with liners or grease using butter.
- In a medium bowl, mash the bananas. Add the sugar, yogurt, egg, oil, and vanilla.
- In a separate bowl, combine the flour, cocoa powder, baking powder, baking soda, and salt.
- Add the chocolate chips to the dry ingredients, then add to the wet ingredients and stir until just combined.
- Fill the muffin tins and top each muffin with some chopped walnuts.
- Place the tin in the oven and bake at 425° F for 5 minutes. Without opening the oven, reduce the temperature to 350° F and bake for another 20-25 minutes, until a toothpick inserted into the center of a muffin comes out clean.
- Allow the muffins to cool for ten minutes before removing them from the tin. Enjoy!
