Crunchy Thai Chickpea Salad

This delicious salad features crispy vegetables, crunchy chickpeas, and a sweet peanut dressing. It’s filling, satisfying, and packed with flavor and healthy ingredients. 

On the Ingredients

  • Chickpeas, also called garbanzo beans, are a legume that’s been cultivated in the Middle East for centuries. They’re an excellent source of plant proteins and have some great nutritional elements. Chickpeas contain manganese, folate (vitamin B9), copper, iron, zinc, phosphorus, magnesium, thiamine, vitamin B6, selenium, and potassium. Because of their high fiber, chickpeas may help keep you feeling full longer, aid in digestion, and help regulate blood sugar. (Read more on the health benefits.)
  • Peanut butter is the most popular nut butter and is beloved around the world. Peanuts, actually a legume, are indigenous to South America, and the earliest records of eating a paste made from ground peanuts come from the Aztecs and Incas. The American agricultural scientist George Washington Carver is often credited with inventing peanut butter, but even though he was very influential in agricultural history, he merely included a recipe for it in his 1916 work “How to Grow the Peanut and 105 Ways of Preparing it For Human Consumption.” There had already been several patents filed for various methods going back as far as the 1880s. Peanut butter is high in protein, healthy fats, and antioxidants. It’s low in carbs and on the glycemic index. A small percentage of the population is allergic to peanuts and should avoid them. 
  • Thai basil, despite its name, is used widely across all of Southeast Asia, where it’s originally from. This variety of basil has a mild licorice and anise-like flavor with a hint of spice. It has long and narrow leaves and a purple stem.

Ingredients

  • Crunchy Chickpeas
  • 1 can of chickpeas

  • 1 tbsp sesame oil

  • Zest of 1 lime

  • 1 tsp chili powder

  • 1 tsp ginger

  • 1 tsp garlic powder

  • Salad
  • 2 cups loosely packed chopped kale

  • 2 cups shredded cabbage

  • 1 cup grated carrot

  • 1 English cucumber (sliced)

  • 2 large scallions (chopped)

  • 1 red bell pepper (sliced)

  • 1/3 cup chopped cilantro

  • 1/4 cups chopped Thai basil

  • Peanut Dressing
  • 1/3 cup peanut butter

  • 1 tbsp sesame oil

  • 1 tsp rice vinegar

  • 1 tsp soy sauce

  • Juice of 1 lime

  • 1 tsp garlic powder

  • 2 tsp sugar

  • Garnish
  • Chopped peanuts

Directions

  • Preheat the oven to 350° F.
  • Drain the chickpeas, rinse them, and shake off the excess water. Put them in a bowl and toss with the sesame oil, lime zest, chili, ginger, and garlic.
  • Place them on a baking sheet and roast for 25-35 minutes until they're crunchy on the outside.
  • While the chickpeas roast, prep and combine the salad ingredients.
  • Mix the peanut dressing ingredients together. It will be thick and sticky.
  • Thoroughly mix the dressing into the salad so that all the ingredients are evenly coated. Add the chickpeas and top with peanuts.
  • Serve and enjoy!
