Simple Matcha Cookies
Matcha is not only a fantastic drink, but it’s also a delicious ingredient for baking. Because of it’s fine, ground nature it is readily incorporated into recipes without altering the consistency or texture. It’s also relatively strongly flavored, meaning you only need to use a small amount. The bright green color will add a pleasant shade to any cookie jar. These cookies are buttery, crumbly, and mildly sweet. They go well with afternoon tea!
1/2 cup room temperature butter
1/4 cup confectioners sugar
1 cup potato starch
1/2 cup+2 tbsp all purpose flour
1 tsp matcha powder
In a mixing bowl, beat confectioners sugar and butter until light and fluffy. Sift the potato starch, flour, and matcha and add it to the butter mixture. Use a spatula to incorporate it. You can add more matcha if you want a deeper green. Chill the dough for a half an hour in the fridge.
Using a spoon, scoop out about two tablespoons of dough and form into a ball using hands. Place on a parchment lined cookie sheet, about two inches apart. Press the cookies with a fork, flattening them slightly. Bake at 350 for 10-15 minutes or until the bottom of the cookies are golden brown.
