Asparagus & Avocado Salad
This is an excellent salad that is quick and easy to put together. Asparagus and avocado complement each other perfectly, and the grapefruit gives a bitter-sweet kick. This recipe serves two as a side or one as a main course.
1 bunch of asparagus
1 ripe avocado
1/2 a grapefruit
Salt and Black Pepper
Balsamic vinegar (optional)
To start, cut the hard bottoms off the asparagus and cut the remaining stalks in half. Steam them until you can pierce them with a fork then rinse them in cold water to stop the cooking process. Arrange the asparagus on your plates.
Peel the grapefruit and take a section. Carefully remove the skin and white flesh around the juicy pockets. The skin and white flesh are where most of the bitterness comes from. When you have done this for half of the grapefruit, slice each section into thirds and arrange on top of the asparagus.
Slice the avocado in half and remove the pit carefully, slice into long pieces and scoop out with a spoon. Arrange them on top of the grapefruit slices. Sprinkle the salad with salt and black pepper, then drizzle with olive oil. If you like, you can add balsamic vinegar.
This salad should be made directly before serving as the avocado will begin to brown once exposed to the air.
