Cafe Tomato Bisque

From the Co-op Cafe kitchen!

One of our favorite soups! It's easy to make at home and delicious with a nice grilled cheese or an avocado and fresh veggie sandwich. 

1 medium yellow onion
6 carrots (we suggest King Hill Farm’s amazing carrots!)
1 bunch celery
1 tablespoon minced garlic
2 tablespoons olive oil
1/2 tablespoon basil
1/2 tablespoon oregano
1/2 tablespoon thyme
1 tablespoon nutritional yeast
2 teaspoons sea salt
1 teaspoon black pepper
3 cans diced tomatoes in juice
1 can coconut milk
4 cups vegetable broth

Cook the onion, carrot, celery, and garlic in the olive oil until fragrant. Deglaze the pot with vegetable stock and add spices. Add two can of tomatoes. With an immersion blender, puree vegetables until smooth. Add the last can of tomatoes and coconut milk. 

If you do not have an immersion blender, you can puree the vegetables and the two cans of tomatoes in a standing blender. You can then put it back in the pot and add coconut milk, vegetable broth, and the last can of tomato.
