Citrus Fennel Salad with Tahini Avocado Dressing

Ingredients
- Salad Ingredients
1 fennel bulb, thinly sliced
1 English cucumber, sliced into half-moons
1 ripe avocado, thinly sliced
1 large orange, sliced into thin half-moons
chopped fennel fronds for garnish
- Dressing
1 large ripe avocado
1/4 tahini
1 garlic clove, minced
1 lemon, juice and zest
2 tbsp avocado oil
1/4 - 1/2 cup water
salt and pepper to taste
Directions
- Combine the salad ingredients on a platter, decoratively placing the orange slices on top and garnish with chopped fennel fronds.
- In a medium bowl, smoosh the avocado and tahini together until smooth. Add the other dressing ingredients and stir to combine. Adjust the water amount for consistency of preference. Alternatively, combine the dressing ingredients in a food processor and blend until smooth.
- Serve the salad with the dressing. Enjoy!
